Potluck Dish

Yesterday, my husband had potluck lunch in the office. Since I am not such a good cook, a pasta will be the easiest dish to prepare. Here is the recipe of that pasta, unfortunately I was not able to get a picture since I was a little bit late.

Penne Pasta with Mediterranean cod

Ingredients:
Cod Fillet
5 ripe tomatoes, seeded and diced
1 cup black olives
3 tablespoon chopped fresh basil
3 tablespoon freshly chopped garlic
3 tablespoon balsamic vinegar
5 tablespoon virgin olive oil
1 box (1 lb) penne pasta
Salt and Pepper
Fresh feta cheese crumbles for toppings
Classico pasta sauce

Preheat oven to 400F
Bake cod fillet in a baking dish for 20 minutes , covered loosely with foil.
In a large bowl, combine tomatoes, olives, basil, garlic, balsamic vinegar, and olive oil.
Cook penne in boiling salted water until al dente for 12 minutes. Drain. Add Classico pasta and toss. Add tomato mixture and season with salt and pepper.
Put the cod fillet on top and sprinkled with feta cheese.

Could she be a witch this Halloween?

Until now, I cannot make up my mind what will be Gabz costume this Halloween :-( I keep asking her if she wants to be a witch. Firmly and adamantly said NO! Who wants to be a witch anyway? Maybe Mommy wants to be a witch this Halloween :-)

Have you bought your kids costumes already ? Any good suggestions? I want something unique this time. Two years ago, on her first trick or treat she wore a tiger costume, she was so cute back then. Then last year she was super girl, sexy little thing! She wants to be a princess this time, but I was thinking that it will be quite chilly during the trick or treat for that costume ! Maybe I can buy a cape or something and let her wear thermal shirt inside. Maybe, but have not made up my mind yet. Let us see :-)

She is Hot!

Gabz was not able to go to school today. After she woke up this morning, she lay down in the couch as usual. Mommy is busy preparing for Andi's bath, that I was not able to noticed how Gabz was feeling then. After a while I noticed that she fell asleep, so unusual for Gabz to do that. When it was already time for school, I saw that she was already awake, so I asked her to get up and eat lunch. She told me, "Maybe later Mom." Hmm I was surprised because every time I asked her to prepare for school, she was always so jumpy about it. And this time she answered later? Something is wrong? I went to her and asked if she is not feeling well, and she said she is sick. Checked her temperature and Oh my, it's 102! She was flushed and so hot! Gabz seldom had 102 fever, usually just a 100, but this time 102? And last night she does not have any signs that she is sick at all. No school indeed :-( I tried to fed her but she doesn't want. Give her Tylenol and sponge bath though, after a while her fever went down. My poor baby :-( Until now she is still laying down in the couch taking a rest, all bundled up.

Hope she feels better soon.

First Field Trip - Pumpkin Patch

I can't believed that I have to attend school field trips such as the one we had today. I feel like it was only yesterday since I gave birth to Gabz, and now she has field trips and other school activities that I have to attend as a parent. Whew ! "as a parent". Time really flies so fast!

So, we went to a Pumpkin Patch at Thomasson Family Farm in Enumclaw here in Washington this morning. The kids was so excited to pick some pumpkin since this is their first time to do it. Upon arrival, we had a wagon ride around the big pumpkin field. The kids was able to see different kinds and sizes of pumpkins.

The three BFF taking a pose after their wagon ride. Unfortunately they were not able to go down the big field to touch those huge pumpkin. I can't imagine what would it be like when all kids are in the field :-)

They had fun walking around the corn maze looking for farm animals. The teacher asked them to remember each animals because she will gonna ask each one of them in school on Monday. Hmmm, I'm not so sure the kids will remember as they enjoyed a lot going around the corn field.

The farm will not be complete without hay stacks and corn! They got slides in the middle of the hay stacks with lots of corn to play with. This is the place where we have to drag the kids out because they really had a blast.

The most awaited moment, picking up the pumpkin! They all wanted to pick the smallest pumpkin, but of course mommy's wants the biggest one (for kids sizes though).

In a nutshell, Gabz really enjoyed her first field trip in the Pumpkin Patch (and mommy too, it was my first pumpkin trip :-) ). Next month they will have another one in the Salmon Hatchery. Can't wait !

I mentioned on my previous posts that Gabz goes to school this school year. I brought her to school on the first few weeks, but lately her Dad was the one who dropped her off to school. One day out of the blue she told me that she needs to go to the wall. I said, OK without really thinking what she meant by that. Until evening came when I was talking to my husband discussing about Gabz field trip in school, when I realized what she previously told me about "Going to the wall". The idea sink in to me that it might be some sort of punishment given by the teacher in school when she don't behaved. We never asked her to Go to the wall or face the wall for any misbehaving. We always tried to talk to her about her actions and explain why she should not do this and that.

I felt so uncomfortable thinking that someone was trying to discipline my child. I know that it is the teachers job to teach them some rules and stuff, but it bothers me the same. I asked my husband to asked her teacher if there is any problem with Gabz in school.

The next day, my husband told me that the kids go to the wall as part of the game they did the other day. I was so relieved to hear that.

The pain never stops there....

After nine months of pregnancy and giving birth, the pain does not stop there. After giving birth, you still have to endure the pain while your body recovers and trying to go back to its normal self.
